Cute Little No-bake Strawberry Icebox Cake To Delight You And Bring Smile On Your Face!

To prepare it you need the next ingredients:

8-10 biscuits

2 cups heavy whipping cream

1/4 cup of granulated sugar

1 tbsp vanilla extract

1 lb of fresh strawberries, cut into quarters

2 cups of powdered sugar

2 tbsp fat or butter

1/4 tsp salt




Instructions:

Separate a handful of strawberries for decorating the top of the no-bake cake.  Place the remaining strawberries in a large mixing bowl.  Sprinkle some granulated sugar on top of them.  Mix them to combine and leave it sit.

In a tall mixing bowl beat the heavy whipping cream with an electric mixer until you see a defined trail.  Add the vanilla extract and a quarter cup of powdered sugar. Beat the mixture until stiff peaks are formed.  Set it aside for later use.

Line a 9 x 5” baking pan with plastic wrap.   Layer one third of the whipped cream into the pan. Add half of the strawberries and half of the juice on top of the whipped cream and spread it evenly.  On top of it place a layer of biscuits.

Then add another third of the heavy whipped cream, smoothing it evenly.  Add the rest of the strawberries and juice smoothing it evenly over the cream.  Again place a layer of biscuits on top of it.  Cover the pan and freeze if for 3 to 4 hours. In the meantime, add the fat (or butter), salt and the remaining powdered sugar to the rest of the heavy whipped cream.  Beat the mixture in until it blends together.

Take the cake out of the freezer and invert the pan onto a plate.  Glaze the cake with whipped cream and sprinkle the remaining strawberries on top of it.  Again store it in the freezer until it is ready to be served.
