Mason Jar Cheesecakes

Ingredients
nonstick cooking spray
12 oz. cream cheese, softened to room temperature
1/2 c. sugar
2 large eggs
2 tbsp. sour cream
1 tsp. pure vanilla extract
15 graham crackers, crushed
5 tbsp. melted butter
2 tbsp. brown sugar
pinch of kosher salt
Sliced strawberries, for garnish





Directions
Preheat oven to 325° and spray mason jar lids with nonstick cooking spray.
In a large bowl using a hand mixer, blend cream cheese, sugar, eggs, sour cream and vanilla until combined. Set aside.
Make the crust: Stir together graham crackers, butter, brown sugar and salt. Press into lids and bake for 8 minutes. Divide cheesecake mixture amongst the crusts and bake for 15 to 18 minutes.
Let cool for 1 hour, then top with strawberries and serve.
